Coffee and chocolate in a donut with a delicious sweet glaze on top. Is it bad if this is the flavor combo my 12 year old chose to make?
Yes, it's true - my 12 year old wanted to make donuts yesterday and after pouring through different recipes this is what she chose to make. She loves a good mocha frappuccino (which she probably shouldn't be drinking either) so when she saw these two ingredients together there was no changing her mind.
Sweet Girl made these Mocha + Chocolate Chip Donuts all by herself. She made the glaze and did all the dipping to finish these off beautifully. I did step in and shave a little bit of chocolate on a few of the donuts but I actually think hers look better. Sweet Girl doesn't get in the kitchen as often as she use to but when she does she always chooses to bake....and she never disappoints. Needless to say, this was a definite win for her and a definite lose for my diet.
recipe adapted from foodfanatic
for the glaze
1 1/2 cups powdered sugar
2 tablespoons milk
Preheat the oven to 375 and spray a donut pan.
Beat together the sugars and the butter until creamy. Add in the egg, the vanilla extract and the yogurt and blend again.
In a separate bowl sift together the flour, baking soda and baking powder. Slowly add this mixture to the butter mixture and add in the coffee. Mix well.
Add in the chocolate chips and mix by hand.
Spoon this batter into the donut pan filling about 3/4 of the way.
Cook for 10 minutes and then allow to cool on wire rack a bit before glazing.
For the glaze
Combine the powdered sugar with the milk until mixture is smooth.
Dip the tops of the donuts into the glaze and allow to set.
You can see the few that I shaved some chocolate over - feel free to jazz your up any way you want or to leave them alone.
I enjoyed mine with a cup of strong coffee - perfection!
