Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that most of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!
This month I was assigned the blog, bcmom's kitchen, I loved how reading about this blog immediately reminded me of my own. The main focus is on recipes that are not just good but also easy. Taking the frustration out preparing dinner and making it fun and doable. I found so many delicious recipes on here, the Chili Lime Salmon Tacos sound amazing and I still plan on making these Sweet Potato Chips. For this reveal I decided to challenge myself with an item that has been on my Cooking Bucket List for quite some time, Cinnamon Rolls.

and they were so good
and they were so easy
and I will be making them again
I did do one thing wrong, I placed these rolls in a round and way too small pan when I baked them. Here is the before picture:
They look really good here but after they cooked they were fighting for space in this small pan. I did take a picture but it was so bad and almost obscene - I couldn't bring myself to post it. Lesson learned. The good news is that while they may not have been the best looking cinnamon rolls they were definitely the best tasting ones I have had in a long time!
recipe from bcmom's kitchen
for the dough
1 cup of milk
1/3 cup of sugar
1/3 cup of butter
1/2 teaspoon of salt
4 - 4 1/3 cups AP flour
1 package active dry yeast
for the filling:
3 tablespoons of butter, melted
1/2 cup of sugar
2 teaspoons of cinnamon
for the icing
1 cup of powdered sugar, sifted
1/4 teaspoon of vanilla
3-4 teaspoons of milk
Place all the dough ingredients in a bread maker and run the dough cycle.
Once this is done, turn the dough out onto a lightly floured surface and divide in half. Cover and allow dough to rise for 10 minutes.
Roll each half into a rectangle about 12 x 8 inches. Combine the sugar and cinnamon together. Brush the dough with the butter and sprinkle with cinnamon and sugar mixture.
Roll each rectangle up, jelly roll style starting from the long side. Pinch the seam together and then cut each half into 10 equal pieces. Place these cut side down on a rectangular pan (not a round pan.) Cover and let rise for about 30 minutes or until rolls double in size.
Bake rolls in a pre-heated 375 degree oven for 20-25 minutes or until golden brown.
To make icing:
Stir together the powdered sugar and the vanilla in a small bowl, drizzle in the milk and mix until you have a smooth consistency. Drizzle this over the rolls and enjoy!!!
