Chocolate Chip Blondies

The other day I had a craving and a pantry full of ingredients...this happened.

This was an interesting craving though because you see, I have never made blondies before and dare I admit, I don't remember ever eating one.  But - I really wanted to make them.  I found a very simple recipe that included some ingredients in my pantry - then I went ahead and added one more ingredient from my pantry and ended up with this wonderful treat.  The kids were at the movies with their aunt so this surprise was in the oven when they came home. They really smelled delicious.  So good that we had to all try one before the appetizers and dinner were even in the oven.  

The ingredient I chose to add to these were some mini semi sweet chocolate chips - they were perfect.  But I do love to add semi-sweet chips to a lot of things because they are one of my favorite sweet treats.

My husband decided these needed to be served warm topped with ice cream and some caramel sauce - oh my goodness - he was right (but don't tell him.)  I wish I had a picture of that for you.

Try these now - please - you won't be disappointed!!

1/2 cup melted butter (softened)
1 cup  of packed brown sugar
1 egg, beaten
1 teaspoon of vanilla
1/2 teaspoon of baking powder
1/8 teaspoon of baking soda
a pinch of salt
1 cup of flour
1/3 cup chocolate chips (I used mini semi-sweet)

Preheat oven to 350 and lightly grease or spray an 8x8 pan with cooking spray. Mix the butter and sugar in a bowl. Add in the egg and vanilla and combine. Add the flour, baking powder, baking soda and salt and mix everything together. Stir in the chocolate chips. 
Pour batter into the prepared pan and bake for 20-25 minutes or until it passes the toothpick test.  

Allow to cool before serving.
