Applesauce Chocolate Chip Cranberry Oat Muffins

This is the perfect after school snack for the kids a sweet and tasty muffin that you wont mind your kids gobbling up.

I made these on a snow day with the kids in the house.  I was sitting on the couch with the kids watching tv and being very lazy.  And then a thought or maybe a craving popped into my head and I felt a need to make something with oatmeal (my favorite ingredient in the world.)  I also wanted to make something the kids would enjoy that was not full of sugar and that could pass as a good before or after school snack.  I found these Applesauce Cinnamon Oat Muffins and used it as inspiration for my Applesauce Chocolate Chip Cranberry Oat Muffins. My favorite cookie is a good oatmeal chocolate chip cookie and I figured they would be just as loved in muffin form.  They definitely were just as loved.  Next time it would be wise to double or even triple this recipe. Maybe even freeze a bunch?I think I may swap out the cranberries for raisins next time or swap out the chocolate chips for cinnamon ones.  So many options...  What would you add?  

recipe adapted from Taste of Home
1 1/2 cups of oats
1 1/4 cups AP flour
1/2 cup brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup milk (I used 2%)
1 egg
1/2 cup mini semi-sweet chips
1/4 cup dried cranberries

Preheat oven to 400 degrees and spray a muffin pan with cooking spray.

In a large bowl combine the first seven ingredients.  In a separate bowl combine the applesauce, milk and egg. Add the wet mixture to the dry and stir until just moistened.  Add in the chips and cranberries and combine.

Pour batter into muffin pan filling only 3/4 of the way.  
Bake for 16-18 minutes or until a toothpick comes out clean.
Let cool 10 minutes in pan then place on a wire rack.
