Crispy Edamame

I could not stop snacking on this crispy, salty and sweet snack.


One of our favorite snacks is a bowl full of edamame, it's something healthy that I know I can serve as an appetizer or side dish and both my kids will gobble it up.   I wanted to do something different for them and change up this dish for them a little bit using another one of their favorite ingredients, cheese.

This Edamame gets a quick toss in some olive oil, salt, pepper and freshly grated Parmesan cheese before heading into the oven.  The result is a sweet (from the edamame itself) salty and crispy upgrade to a delicious vegetable.


I do admit, I made this with the kids in mind but I was the one who ate most of it.  I snacked on it the next day and added it to my lunch as well.  Fortunately, I was able to make it stretch all the way to dinner the next day so my kids were to enjoy it again.

Ingredients:
1 (12 ounce) package of frozen shelled edamame (thawed)
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
salt and pepper 

Directions:
Preheat oven to 400 degrees.
Toss all the ingredients in a bowl and then spread out on to a sheet pan.
Bake until the cheese is crispy and golden, about 10-15 minutes.
