Slow Cooker Bourbon Chicken

Easy and tasty slow cooker meal.  And kid-approved.



You guys, last week was total roller coaster ride!  My family said goodbye to my uncle - a great man who will be missed.  He is with my dad now and I know they are both watching over our family.



On the same day, we welcomed my niece Kallie Faye to the world - the circle of life.

I can not come up with any way to segway from all that to Slow Cooker Bourbon Chicken - so let's just jump into it.

I have to admit, I was shocked to learn there was no actual bourbon in this dish - I did some research and found a few original recipes for bourbon chicken after I had already made this one.  They do have a marinade with bourbon as an ingredient.  I am going to try those recipes out next.  This recipe however was delicious and my kids loved it - that's always my ultimate goal.

For me, I am now entering that time of year when kids are back in school and after school activities are in full swing.  This is my slow-cooker season (otherwise we may not eat dinner.) I urge you all to break out those slow cookers and give this recipe a try.

Ingredients:
4 boneless, skinless chicken breasts or thighs (we use thighs for everything)
1/2 teaspoon garlic, minced
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/4 cup brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
1/3 cup low sodium soy sauce
1/4 cup cornstarch

Directions:
Add the chicken to the slow cooker.  In a medium sized mixing bowl, combine the minced garlic, ginger, red pepper flakes, apple juice, brown sugar, ketchup, apple cider vinegar, water and soy sauce.  After mixed, pour this sauce over chicken. Cover and cook 6-8 hours on low.  Remove the chicken and shred.  In a small bowl, mix together the cornstarch with 1/4 cup of the slow cooker sauce.  Whisk together and then pour this mixture back into the crock pot to thicken the sauce.  Return the shredded chicken to the slow cooker and keep warm until ready to serve.  Serve over rice and top with red pepper flakes if you like a bit more heat.
