One Pan Pasta

You know that One Pan Pasta dish that is all over Pinterest?  I made it-and we loved it!!

I have had this pasta pinned for a while - I'm sure many of you have too considering it's popularity on Pinterest.  I made it a few weeks ago for the kids and myself when Hubby was out of town and I was skeptical while I was preparing it.  I mean cooking pasta like a risotto?  How is it not going to be overcooked and chewy?  How is not going to be bland when the only liquid in it is water?  

But - I made it anyway.  And then I asked - Why did I wait so long to try this?  And then I made it again for Hubby who asked all the same questions as he watched me cook it.

What shocked me most about this dish was how creamy the sauce was.  There is no cream or butter in this dish but the ingredients come together to give this dish a creamy feel ...and my worries about overcooking the pasta - it was perfect!

I have seen a few variations on this dish and I can't wait to give them a try too.

recipe from Lottie + Doof
1 (12 ounce) box of linguine

12 ounces of tomatoes, chopped
1 onion, thinly sliced
6 cloves of garlic, thinly sliced
1/2 - 3/4 teaspoon of crushed red pepper
a few sprigs of basil (plus some extra for garnish)
2-3 tablespoons of extra virgin olive oil 
kosher salt and black pepper
4 1/2 cups of water
grated Parmesan cheese (for serving)

Combine pasta, tomatoes, onions, garlic, crushed red pepper, basil, olive oil, salt, pepper, and water in a pan. 

Bring to a boil over high heat.  Boil the mixture while turning and mixing frequently.  Do this for about 9 minutes or until pasta is al dente and liquid has mostly evaporated.    

Season to taste with salt and pepper. When serving garnish with parmesan cheese and basil. Enjoy!!!
