Kale Salad W/Dates and Walnuts

Sweet dates, crunchy walnuts and salty feta - how can you go wrong?

I had a huge craving for this salad the other night but I didn't have all the ingredients I needed to make it.  After a quick look through fridge and pantry I was able to come up with a new (maybe better) version of my favorite kale salad.  The thing I love about these salads is unlike any other salad, kale salads are always better the next day after the dressing softens up the kale a bit.  Don't be afraid to make extra.

The original version of this salad calls for dried cranberries, sesame seeds, and parmesan cheese.  I changed this one up a bit and used some dates and toasted chopped walnuts.  Then I topped it with some crumbled feta.  I have also made this with gorgonzola and can't tell you which I prefer.  Have fun with the combinations and use whatever you have on hand.

What are your favorite salad add-ins?

2 tablespoons dates, chopped

2  tablespoons  balsamic vinegar
tablespoon unseasoned rice vinegar
1 tablespoon honey
1 tablespoon extra-virgin olive oil
1 teaspoon salt
2 bunches of kale (about 1 pound), center ribs and stems removed, leaves torn
2 tablespoons chopped walnuts, toasted
feta, chopped or crumbled.

Whisk together the 2 tablespoons of  balsamic vinegar, rice vinegar, honey, oil, and salt in large bowl. Add the torn kale, dates, and walnuts; toss to coat. I learned this next part from The Chew, when eating raw kale it's a good idea to massage the dressing into the kale for a while to help soften the kale a little bit and really let it absorb the flavors.  Now let it sit and marinate for 20 minutes at room temperature, tossing occasionally. Season to taste with salt and pepper. Sprinkle cheese over salad and serve.
