Roasted Shrimp with Lemon , Garlic + Herbs

Deliciously sweet shrimp roasted with aromatic herbs and flavorful lemon and garlic.

My summer has been crazy busy and I haven't had as much time to blog.  I hope you will forgive my lack of recipes and crafts for a little while longer.  I am trying to spend my summer with the kids and not in front of the computer as much as usual.

Going through my camera I found pictures of this delicious and easy shrimp dish I made not too long ago.  This was awesome and we had thumbs up from everyone (even the picky one)  - we also had no leftovers.

This recipe created and amazing sauce that can be served over pasta, rice or our personal favorite, with a hunk of homemade bread. The original recipe calls for thyme but I only had parsley on hand and it was a perfect match.  I know some people are scared to change things in a recipe but use what you have and make a dish your own!


recipe adapted from Cinnamon Spice & Everything Nice
1/3 cup olive oil
1 lemon, zested first and then cut into thin slices 
handful of parsley, roughly chopped
kosher salt and fresh black pepper
2 tablespoons butter
1 pound fresh shrimp
5 garlic cloves, minced

Preheat oven to 400 degrees. In a  baking dish, combine the herbs with the lemon zest and olive oil.  Make sure the olive oil liberally coats the bottom of the pan, add more if needed.  Season with s&p and bake for about 10 minutes, keep your eye on it to make sure its not browning too quickly, if so pull it out and move on to next step.

Remove the pan from the oven and add in the butter, swirling a bit to melt.  Add the shrimp, lemon slices, and garlic to the pan. Make sure everything is coated in the herb mixture.   Bake the shrimp for 8 - 10 minutes or until it begins to turn pink and curl a bit.  

Serve with pasta, rice or bread.
