This is the perfect recipe for when you are looking for something quick, easy and kid friendly!
I hate to admit it but there is a huge difference in what I cook when Hubbys around and what I cook when he's out of town. He has been traveling for work a lot lately and I haven't had the chance to get super creative in the kitchen. Sweet Girl is all about my creativity but Little Man doesn't eat much (so frustrating.) Since I don't like to cook two different meals, I try hard to come up with something he would like and the rest of us could eat (if it was up to him we would have Ramen Noodles, Mac & Cheese, and Fish Sticks every night.) This Taco Pie is perfect. Sweet Girl and I load ours up with veges and all the toppings we like. Little Man has his with tomatoes. Everyone is happy.
Little Man would be very happy with tacos every night too, now I don't know about your kids but the mess that gets left behind in my house is huge!! Funny I say this because as it turns out- tonight we are having tacos. Hubbys home tonight so he can help clean.
This delicious taco pie is covered in a layer of cornbread - yum! So simple and delicious you need to try it!
1 lb ground beef
1 can of beans, I sometimes use black and sometimes red
1 can (14.5 oz) diced tomatoes with jalapenos
1 package of taco seasoning
1 pouch of corn bread mix (65 oz)
1 tbsp vegetable oil
1/2 cup of Mexican cheese
1/3 cup of milk
Heat oven to 425.
Cook the beef in a pan until browned, drain and return to pan. Add in the beans, tomatoes, and taco seasoning. Bring mixture to a boil for about one minute.
Prepare the cornbread according to package but use the egg, oil and milk measurements in the ingredient list. Put beef mixture in a pie plate.
Top with cornbread mixture. Bake 15 minutes. Top with cheese and cook 5 minutes more.
Serve alone or with optional ingredients.
