This creamy Avocado Coleslaw is the perfect side dish for your next cookout.
Hubby has a tendency to do one thing whenever he cooks (without fail) he never remembers a recipe or how he made anything. As soon as I tasted this, I grabbed a pen and said, "Tell me exactly what's in this!"
I recommend you add the mayonnaise a little at a time to the recipe and then adjust for your taste. I prefer the recipe with less mayo but I am going to share it with you the way Hubby made it (and likes it.)
I think this slaw would be the perfect accompaniment to some delicious fish tacos - and that will definitely be happening in the near future. But for now I'll just grab a spoon and eat it straight out of the bowl...enjoy!!!
1 shallot, shaved
2 avocados, peeled and sliced
1/2 head of cabbage, shredded
1 tablespoon olive oil
1/2 cup mayonnaise
3/4 cup cilantro, chopped
salt and pepper, to taste
Combine everything in a bowl, adding the mayo a little at a time. Garnish with some cilantro and serve.
