Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that most of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!
I was super stoked about my assignment this month, I was assigned Andrea's blog, Adventures in all Things Food. I am familiar with her blog and I'm already a follower, I knew I would have a hard time choosing just one recipe. I originally decided to take on her egg bagels and thought I had all the ingredients in the house. I went to make these and realized they would have to wait until another day. With the help of some family members, I settled on her Brown Butter Very Blueberry Muffins.
This was the perfect recipe for my family. I surprised my kids with these after school on Friday and it was the perfect way to end the week and welcome the weekend. My Sweet Girl ate so many of these and told me (not asked me) to make these again. She fell in love with the crumb topping, my favorite part too, and has decided they are the perfect snack, dessert and breakfast. And don't even get me started on the amazing aroma that fills the house when you make the brown butter....enjoy!!!

7 tablespoons unsalted butter
1/3 cup milk
1 large egg
1 teaspoon vanilla extract
1 1/2 cups AP flour
3/4 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
2 cups of blueberries dusted with flour
Preheat the oven to 375 and line your muffin pan with liners.
Melt butter in a small saucepan over medium heat, butter will melt and begin to crackle as it turns a nutty brown color. Once this happens (and it begins to smell amazing) remove from heat.
Whisk together the milk, egg and vanilla. Add the browned butter and mix together.
In a medium bowl sift together the flour, sugar and baking powder and salt. Add the wet ingredients all at once and combine gently, don't over mix. Fold in the blueberries and scoop into muffin tin.
Now for the topping!
3 tablespoons of cold butter
1/2 cup AP flour
3 tablespoons brown sugar
Combine these ingredient in a bowl crumbling with your fingertips.
Sprinkle it over the muffin batter, I made a huge mess when I did this.
Bake for 18-20 minutes, check with a toothpick to make sure they are done. And dig in - you will love the topping and you will get blueberries in every single bite - these are the perfect muffins.
