Curried Cauliflower Steak with Chickpeas + Feta
I am trying hard to eat better but I have to admit lunch can be challenging at times. As much as I love a good salad, I need to change things up every once in a while. I got creative today with my lunch and I was so thrilled with the result!! Really, like super thrilled, the dishes from my meal are still sitting in the sink and the pan is still hot but I had to run over and get this post written so I don't forget how I made this.
I have to admit, I never thought I big hunk of cauliflower would get me this excited, but it did! I almost didn't even stop for a picture because I just figured this was, well, just a big hunk of cauliflower. I'm glad I took a few pics and I am excited to share this recipe with you. Eat it for lunch, dinner or as a side...enjoy!!

I large slice of cauliflower (use a slice from near the center otherwise you will end up with pieces instead of a steak.)
1/2 cup chickpeas
1/4 cup feta
red pepper flakes (optional)
Heat an oven proof skillet over medium heat.
Drizzle olive oil on the cauliflower and season with salt and curry powder on both sides.
Add the cauliflower to the skillet and brown.
Flip and brown other side and add in the chickpeas. Season the chickpeas as well with the curry and salt.
Place the skillet under the broiler and let the cauliflower caramelize, about 5 minutes, check on it so it doesn't brown too much.
Once its done top with feta and red pepper flakes.
