Red Velvet Cupcakes with White Chocolate + White Chocolate Chips (and an Egglands Best Giveaway)


In yesterdays post,I mentioned that my Little Man turned 8.  Over the weekend we had a few of his friends over to celebrate and I made the kids a cookie cake.  Since yesterday was his actual birthday, I really wanted to make him something special for last night.  And since I had this post to do for Egglands Best, I figured what better time to hit the Food and Crafts test kitchen and remake a family favorite. 

My Aunt Zelda's Chocolate Cake is the go to cake recipe in our family, passed down from generation to generation (and amazingly - is super simple to make.)  I decided to take this recipe and use it as my inspiration for my Little Mans birthday treat.



Before we get to the recipe, how about a little information about Eggland's Best eggs:

So now let's discuss how My Aunt Zelda's Chocolate, Chocolate Chip Bundt cake turned into Little Man's Red Velvet and White Chocolate + White Chocolate Chip Cupcakes.

First, I knew I wanted to make him cupcakes instead of a big fancy cake - they're just more fun for kids - right?

Next up, Why Red Velvet instead of chocolate?  Red is his favorite color so I thought he would get excited about these (and he did.)

Then I got rid of the semi-sweet chips and decided white chocolate chips would go great with the red velvet.

And did I mention there is also white chocolate pudding in here - oh yeah!!

The end result was a sweet, moist and delicious cupcake.  Next time (and there will most certainly be a next time) I am definitely whipping up some Cream Cheese Frosting for these guys, not that they needed it. For now, they were topped with dusting of powdered sugar - maybe more than a dusting - OK fine maybe I just let it snow all over these red velvet beauties.

Here's the recipe ....enjoy!!



a Mostly Food and Crafts original recipe 
Ingredients:
1 box of Red Velvet cake mix
1 box of White Chocolate Instant Pudding mix (4 oz)
2 Eggland's Best Eggs
1 + 3/4 cups of milk
1 bag of White Chocolate Chips

optional: Powdered Sugar

Directions:
Preheat your oven to 350 and grease, spray or line your muffin tins. Mix together the cake mix, pudding, eggs, and milk until well blended.  Stir in the chocolate chips.
Fill the muffin tin with the batter and cook for 20 minutes.
Allow to cool on a baking rack and dust with powder sugar if you wish.
