I feel like ever since I started blogging I have been reluctant to remake any of my old recipes. I am always looking for or creating something new so I have fresh content for you guys. I was looking for a good slow cooker recipe last week to make for just me and the kids (Hubby is out of town a lot these days so mealtime has become a little different.) I wanted something that would be ready after we got home from the kids late activities. But - it has been so dreary and nasty lately so I was really craving some good comfort food.
What's more comforting that a hot bowl of Creamy Chicken and Biscuits?
Guess what else? Hubby doesn't like Chicken and Biscuits - I know right? And get this,he doesn't like a Pot Pie either. These are some of my favorite eats....
But let's start with the Chicken and Biscuits first. This post was originally from a series I did titled, "Your Recipe - My Kitchen." This wonderful Creamy Chicken and Biscuits is from Framed Cooks.
recipe (slightly modified)from Framed Cooks
4 carrots, cut into small chunks
2 celery stalks, cut into small chunks
1 small onion, chopped
1/4 cup AP flour
1 pound chicken breast tenderloins, cut into large pieces
1/2 teaspoon poultry seasoning
kosher salt and black pepper
1/2 cup dry white wine
1 cup low-sodium chicken broth
1 can of biscuit dough
1 cup frozen peas
1/2 cup heavy cream
Combine the vegetables and the flour in a slow cooker. Add the chicken and season with the poultry seasoning, salt and pepper. Add the wine and the broth to the pot and cover for 5 to 6 hours on high, or until the chicken and vegetables become tender. About 10 minutes before you are ready to eat, make the biscuits (you can also make these earlier if you want to and let sit until serving time) and add the peas and cream to the slow cooker. Season again with salt and pepper and stir to combine.
Place half the biscuit in the bowl, ladle the mixture over it and then top with the other half of the biscuit.
And on a completely different note- My amazing Little Man turns 8 today! I don't know how it happened, it seems like not too long ago he was just an itty bitty!!
