Garlic + Parmesan Roasted Chickpeas
Ever since I discovered this recipe for Roasted Chickpeas, I have been a fan. The other day when I was looking for a healthy snack for us to have out during the football game I came across this recipe for Roasted Chickpeas from Modern Parents Messy Kids. I loved that this showed a few different ways to season up a can of chickpeas and make a great snack that both the kids and adults would like. The hardest part for me was deciding which of the four versions in the post to make. I took a vote and the Garlic + Parmesan won hands down. You can't go wrong with garlic and grated nutty Parmesan, right? Its a winning combo no matter what you put it on. I'm looking forward to trying the rest and I may try the Sesame Soy for today's game day snack...enjoy!

2 cans of chickpeas, drained and rinsed
2 tablespoons of Olive Oil
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
Kosher Salt and Pepper
Preheat oven to 375.
Spread chickpeas on a lined baking sheet. Roast until the beans are crunchy throughout, 45-60 minutes.
As soon as they are out of the oven mix with olive oil and the rest of the ingredients and serve.
