Slow Cooker Granola



I love oats and I was so excited to find a round-up of oats recipes on Finding Joy in My Kitchens blog not too long ago.  What really stood out to me was a recipe for Crockpot Granola.  As soon as I saw it I ran to the pantry and pulled out my oats and got to work. Nothing beats a good homemade granola - so much better than the kind you buy in the store. I love making it on my own because I am able to control the amount of sweetener in it.  This recipe calls for applesauce and I used my homemade applesauce in here. 
Like anything in the slow cooker - this had the house smelling amazing! Next time I am doubling the recipe!!!

Ingredients:
5 cups of Old Fashioned Oats
1/4 cup packed brown sugar
2 teaspoons of cinnamon
3/4 cup of applesauce
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon olive oil
a pinch of salt

Directions:
In your slow cooker combine the oats, brown sugar, cinnamon and salt and stir it up.
In a small bowl combine the  3/4 C applesauce, 2 T honey, 1 tsp. olive oil and a splash of vanilla.  Pour this over the mixture in the slow cooker and mix it well making sure to coat the oats.  It takes a little while to get it completely moistened.
Turn your slow cooker on low and cover with the top using a wooden spoon to keep the lid open a little.  Allow it to cook for 5-7 hours, stirring every 30 minutes or so.  
Take the cover off and allow the granola to cool completely.
At this point you can add in any optional mix-ins; raisins, cranberries, nuts, seeds...
