Pumpkin, Oatmeal + Chocolate Chip Cookies

I love Fall!

I love all things Pumpkin!

If you've been around for a while you also know...

I love Oats!

These Pumpkin, Oatmeal +Chocolate Chip Cookies were inevitable, they had to happen.  You know what?  They happened twice already.  Two weeks in a row.

mmmhhhh....that good!

Also - I just found out that Sweet Girl brought some to school and told everyone at lunch that her mom was making these for the fall party - then she gave them a taste and they liked it!  I was a bit surprised because not all kids will eat a pumpkin cookie -or an oatmeal cookie for that matter.  I guess they liked them!  I guess I will be making a double batch for the fall party.

You know what else is good?  Taking two of these awesome cookies and sandwiching some pumpkin ice cream in between them....oh yeah!

I made a small change to the original recipe, it called for 1 cup of butter and I used 1/2 cup of butter and subbed 1/2 cup of Apple Butter for the rest.

2 cups flour
1 cup oats
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened (or 1/2 butter and 1/2 cup apple butter/sauce)
1 cup brown sugar
1 cup granulated sugar
1 egg, beaten
1 teaspoon vanilla
3/4 cup packed pumpkin
1 cup semi-sweet chocolate chips

Preheat the oven to 350 degrees. Meanwhile, combine the flour, oats, baking soda, and salt in a bowl. In the mixer, cream butter and gradually add sugars, continue beating until light and fluffy.  Add the egg and vanilla and mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. When its all mixed together stir in the chocolate chips.
Drop a heaping tablespoonful of dough onto lightly greased or parchment paper-lined baking sheet. Bake for 13 – 15 minutes or until cookies are firm and lightly browned around the edges.

This makes a lot of cookies!!
