SRC - Mustard Garlic Roasted Potatoes

Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that all of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!

This month my blog assignment was Thru the Bugs on My Windshield.  I was super excited to get Suzanne's blog.  Suzanne works hard to make sure we get our assignments on time and to keep group B in order - I hope I do her proud!

When I started perusing through the recipe list, the first recipe that caught my eye was Dan's October Soup, this recipe sounded wonderful but I wanted to make one of Suzanne's recipes so I went back to the recipe list.  The next recipe that caught my attention was for Mustard Garlic Roasted Potatoes.  Guess what - this was Daniels recipe too. I guess it was sign - I decided to make one of Daniels recipes by way of Suzanne's blog. For those of you who may be new, Daniel was a fellow Group B blogger.  He was a kind man and always took the time to leave meaningful comments on our recipes.  He passed suddenly one year ago leaving behind his young family.  I am honored to share one of his recipes with you all today.  
Thanks Suzanne for sharing this great recipe, I wish I had some beautiful colorful potatoes like Suzanne did, mine are red only.  I did have a great mustard in the fridge that I have been putting on everything lately - I think that was why I was drawn to this recipe.  I loved the flavors in these potatoes so good.  I did feel the potatoes needed a bit of salt, its the only addition I would make....enjoy!

2 pounds of small potatoes
2 tablespoons olive oil
1 teaspoon ground black pepper
2-3 garlic cloves, minced
1 tablespoon of your favorite mustard
kosher salt - to taste

Preheat oven to 400 degrees
Rinse the potatoes and pat dry

Place potatoes in a large bowl.
Combine the oil, pepper, garlic and mustard in a small bowl and whisk until combined.
Pour the sauce over the potatoes and toss to coat every potato.
Bake in the oven for 15 minutes, then toss the potatoes a bit and bake for another 15 minutes or until the skin is nice and brown.

  3. I can almost taste the salty, garlic mustard sauce on these delicious roasted taters - it is tempting enough to make me forget the usual slather of butter! What a perfect side dish to tonight's grilled pork roast and Brussels sprouts. Yum.
