Sauteed Pork Chops and Kale
I'm not sure if you have noticed, but lately my recipes have become much simpler. I am trying hard to lose a little weight before my sister's wedding. So far, by giving up my beloved carbs, I have lost close to 10 pounds. I love them way too much to give them up for good but this diet has taught me how to moderate better. I thought I had moderation under control before but I am definitely learning to be better and more in control (not at the mercy of a freshly baked loaf of French bread.) Also, I have noticed that I feel a lot better. I had a tendency to get stomach aches after bigger meals and I am thinking it may be related to the food I was eating and not necessarily the amount I was eating. It turns out this diet is an interesting study into my health and wellness - who would have thunk?
So without further ado I give you another simple recipe (and yes - more kale.) A lightly seasoned and sauteed pork chop with some easy to make kale. Another bonus - it is all made in the same pot - I love a one pot meal (Im a lazy cleaner upper.) And I would like to add simple is both beautiful and delicious!....Enjoy!

2 large bunches of Kale, chopped
4 Pork Loin Chops
3 Garlic Cloves, finely chopped
1 Lemon, juiced
In a large skillet over medium-high heat, heat enough oil to coat bottom of pan. Season both sides of the pork with salt and pepper. Brown the chops until cooked through, about 4 minutes per side. Transfer to a plate and cover loosely with foil to keep warm.
Add 1 more tablespoon of olive oil to your skillet. Saute garlic until golden, about 1 minute. Add kale and sauté until tender, about 10 minutes. Sprinkle with lemon juice and season with salt and pepper.
