I'm back! I missed you guys - the kids had spring break and I decided to unplug and hang with my family. My Sweet Girl also turned 10 while we were on break. Yup - the big double digit birthday!! I have been working hard on her room transformation and I will post that another time. I promised her a "Big Girl Room for her 10th birthday but that was a while ago when 10 seemed so far away...they grow up SO fast!!
Back to food though...
I am usually early to everything but as far as the kale bandwagon is concerned, I think I am late to hop aboard. I can't get enough kale and I buy it every time I go to the store. I recently read that a food trend that is over is yup - you guessed it kale. I am definitely not ready to give this trend up. I love my kale and since I have given up carbs, I need my kale chips - I may post that another time but I think there are a lot of kale chip recipes out there and they are all the same. And they are all good!
I found this recipe when I was looking for a quick way to saute up some kale for dinner the other night (although I have to admit - this is still my favorite kale preparation but you know - sometimes a change is good too.) I decided to try this Bobby Flay recipe it has delicious sauteed kale paired with another favorite ingredient of mine, garlic - how can you go wrong right? This is really simple to prepare another plus when you are always rushing to get dinner on the table like I am? Enjoy!!

1 1/2 pounds kale, stems and leaves coarsely chopped
3 tablespoons olive oil
2 cloves garlic, thinly sliced
1/2 cup stock or water
Salt and pepper
2 tablespoons red wine vinegar
Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft and fragrent , don't let it burn. Raise the heat to high and add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.
