Salted Caramel Mocha Chocolate Chocolate Chip Cake


Happy Valentines Day!
My family is in for a real treat tonight, Salted Caramel Mocha Chocolate Chocolate Chip Cake, formally known as Aunt Zelda's Chocolate Cake.  I tweaked my aunts recipe to come up with this amazing cake.  Not that hers wasn't already amazing.  Aunt Zelda's cake is legendary in our family.  I was so excited to get this recipe from her and then shocked to learn that this delicious cake,the one we all would beg Aunt Zelda to make, was so simple to create.  Aunt Zelda is no longer with us but everyone in the family now has a copy of her recipe and we all make it on special occasions.



When I was asked to create a recipe using International Delight Coffee Creamer I was excited to do it but had no idea what to make.  Sweet Girl and I were talking about my Aunt the other day and I knew I had to make her cake.  This cake is so rich and so perfect for Valentines Day (or any holiday like,  "hey its a Thursday lets celebrate with a Salted Caramel Mocha Chocolate Chocolate Chip Cake!")



Ingredients:
1 package chocolate cake mix
1 4oz package instant chocolate pudding
2 eggs
1 12 oz package chocolate chips (I used semi-sweet)
1 cup milk
3/4 cup International Delight Salted Caramel Mocha Creamer

Directions:
Preheat oven to 350 degrees.
Combine the cake mix, pudding, milk, creamer and eggs until well blended.



Add the chips and mix to combine.
Pour the batter into a greased and floured bundt pan (I actually used cocoa powder instead of flour because - well honestly -  I saw Martha Stewart do it on the Chew yesterday and thought I would try it.)



Bake for about 45 minutes - test with a toothpick in the center of the cake for doneness.
