Zuppa Toscana


It's really cold outside.  The kind of cold that will chill you to the bones - you know the kind right?  The kind where no matter what you do you just can't seem to warm up.  Yup - it's soup weather out there.  Not just any soup, of course you want a warm bowl of soup to take out the chill, but you also need a comforting bowl to hold by the fire and enjoy.  I have that soup for you.  It's similar to the Zuppa Toscana you get at Olive Garden but instead of going back out into the cold to have it- you can just go to your kitchen.  This soup is so easy to make and it comes together so quickly.  You get the spicy sausage along with some rustic potatoes and healthy kale in the delicious flavorful creamy broth.  I could eat this again and again...enjoy!

Ingredients:
1 package spicy Italian sausage, sliced
1 tablespoon olive oil
1 medium onion, diced
2 garlic cloves, minced
2 tablespoons chicken soup base
4 cups of water
2 potatoes, halved and sliced
2 cups of kale , chopped
1/3 cup heavy cream

Directions:
Preheat oven to 300 degrees F 
Place sausage links on a baking sheet and bake 25 minutes, or until cooked through. Slice into 1/2 inch slices.
Heat oil in a large saucepan over medium heat. Saute onions until translucent; add garlic and cook 1 minute more or until fragrant.
Stir in broth, water and potatoes; simmer fora bout 15 minutes or until potatoes soften.
Reduce heat to low and add sausage, kale and cream; simmer until heated through and serve.
