Pecan and Olive Cheese Ball

So do you notice anything different?  How cute is my new blog design?  I absolutely love it!  Thank you so much toSarah Darr at Span Tag Designs for being so patient with me while I tried to figure out exactly what I wanted.  Luckily Sarah was able to figure it out for me and I am thrilled with the result.




Confession - this is a picture of a delicious cheese ball after it had already been attacked by some hungry guests - I forgot to take a picture of this before serving it.  Please excuse my messy cheese ball that I tried hard to reassemble.

So where was I?  Oh yes Pecan and Olive Cheese Ball...
At a small get-together a few weeks back a friend of ours showed up with this cheese ball (well not this one - her's was much prettier.)  And Hubby and I could not stop eating it that night or talking about it the next day.  She was kind enough to share the recipe with me and now I am passing it along to you all.  Not only does this recipe call for the pecans and olives that are in the name but it is made with blue cheese and chives too.  Some great strong flavors that complement each other very well...and I would like to add they complement a great glass of wine as well.  This really is a great snack to serve at your holiday parties.  I made some French bread to go along with this but you can serve it with crackers, vegetable sticks or even apple slices.  I will warn you, this recipe makes a lot so feel free to half it or you can find creative ways to use the leftovers like maybe mixing some into a pot of orzo (so good!) ...enjoy!!!

What you need:
1/2 stick butter, softened
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container of crumbled blue cheese
1 (8 ounce) can of green olives
2 tablespoons chives, snipped
1/3 - 1/2 cup pecans, chopped and toasted

What you do:
In an electric mixer, beat together the softened butter, cream cheese and blue cheese on a low speed until smooth.  Stir in the olives and the chives.  Cover mixture and chill until firm.
Once it is firm, shape the mixture into a ball; cover and chill again until ready to serve.  Roll the cheese ball in the nuts before serving.

  2. oh man, I would totally be doing this right now if we had any pecans…or or good olives. You are making my mouth water! I will have to try it as soon as I find the requisite business.

I think you've got tons to brag concerning! and that i would not worry about being "overly boastful" as a result of you are tooting your own horn! i prefer to listen to the great stuff that folks do. It's far better than hearing the long list of crap and ailments they're experiencing over ... and over ... and once again. Hearing dangerous stuff all the time is simply not smart.
