Secret Recipe Club - Cumin Lime Quick Pickles


 



Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that all of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!
 
This month my assignment was Everything in the Kitchen Sink, Sarah is the voice behind this great blog.  Sarah has so many great recipes on her blog I had a hard time choosing what to make.  To be honest - I have every intention of making these Chocolate Banana Muffins tomorrow or the next day - the only reason I haven't done it yet is because I need 2 more bananas to ripen.  I also thought about making her Pan Roasted Garlic Pasta tonight but it was clean out the fridge night and the leftovers needed to be eaten.  I will make this one soon for sure. 
 
I ended up making Sarah's Cumin-Lime Quick Pickles.  I was reading through her recipes and when I saw these I just felt the need to make them.  Seriously it was like "this is it" - first of all anything that has cumin in it is usually a winner in my book and I was intrigued by the combination of flavors for a pickle so I quickly ran to the fridge to see if we had any cucumbers and got to work.  I  did choose a jar that should have been wider so the cucumbers could soak better but I thought this jar was cute so I figured I would suffer for cuteness and just come back to shake the jar a bit a few times.  So do you want to know what we thought of these?  Loved them!  Yes- we all did and they are so simple to make I am pretty sure these will be made over and over and over and over and well you get it right?...enjoy!!

What you need:
1 large cucumber or Sarah recommends 1 package of persian cucumbers (about 2 1/2 cups sliced)pinch of kosher salt1/2 cup of rice wine vinegar (no sodium, no sugar version)
2 limes, zested and juiced
1 1//2 teaspoons ground cumin
1 garlic clove, minced or Sarah recommends  1/2 teaspoon garlic powder
about 1/4 teaspoon of kosher salt
pepper to taste

What you do:
Slice the cucumber(s) and let sit in a colander with a pinch of salt 1-2 hours to drain.
Meanwhile, combine the rest of the ingredients and mix well.
Dab the cucumbers dry and add to the liquid.  Let sit for at least an hour to soak up the flavors.


 
 
I can't believe I have been part of this great club for over a year now - I do love it!
My first post was last October and it was for these wonderful Chocolate Chip Pumpkin Muffins  and last  November I made a delicious Thai Chicken Pizza.
