Here is another Pinned it and Did it recipe. I don't do this often enough. My Pinterest boards are full of amazing recipes begging to be served in my house. I am trying hard to make sure I make at least one a week. This past week I made this great Slow Cooker Peking Chicken from Rachael Ray. She actually calls it No Peeking- Peking Chicken. I covered two of my weekly cooking goals with this recipe- one is to cook off my Pinterest boards as I mentioned already and the other is to utilize my slow cooker more when the kids have after school activities. The kids really liked this dinner, I served this chicken over Asian noodles and remember when I made that Teriyaki Chicken and I told you I could get my kids to eat more just by serving it with chop sticks - I did that again and it worked again. Actually they probably would have eaten this anyway it was fall off the bone yummy goodness and the sauce was simple and flavorful - there was more than enough to drizzle over the noodles. I'm so excited to move this recipe over to my "Pinned it and Did it" Pinterest board. ..enjoy!!

What you need:
8 bone-in chicken thighs (about 4 lbs.), you can remove the skin before cooking or after.
Salt and pepper
3/4 cup chopped scallions (about 6)
4 cloves garlic, chopped
1/4 cup soy sauce
3 tablespoons honey
1 tablespoon grated ginger
1/4 teaspoon sesame oil
2 scallions, chopped (for serving)
What you do:
Season the chicken thighs with salt and pepper and place in a slow cooker.
In a small bowl, combine 3/4 cup scallions, the garlic, soy sauce, honey, ginger and sesame oil. Pour this mixture over the chicken in the slow cooker, cover and cook on low heat until the chicken is tender, about 4 hours. Serve alone or over rice or noodles, top with the pan juices, and sprinkle with 1/4 cup scallions.
