Secret Recipe Club - Pork Chops With Mustard Sauce

Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that all of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!
This month my assignment was Amy's Cooking Adventures  Amy is the voice behind this great blog.  Turns out Amy wasn't always interested in cooking and was laughed at for adding cooking items to her wedding registry.  After looking through her delicious recipes I am having a very hard time believing that.

Amy has a lot of great recipes on her blog and I am definitely coming back to try out some more of her creations like her Jalapeno and Cheese Pull A Part Bread and her Pumpkin Pie Spice Latte Cookies.  For this months SRC I made Amy's Pork Chops with Mustard Sauce.    Here's the story behind why I chose this recipe:  I had pork chops defrosted, we decided last minute we were going to be headed out of town for fall break and I knew I had one night and a day or two to make my SRC recipe.  I quickly pulled up Amy's Cooking Adventures and did a recipe search for all things pork and I found this recipe - it looked great plus I had all the ingredients in the house.  Can I just say - I am so glad I was rushed to find a recipe because otherwise I may not have ended up making what might actually be our favorite way to eat pork chops - yes I said favorite.  This was so good!  I could see making this sauce and pouring it over just about anything or maybe just eating it with a that probably wouldn't be a good idea.  Let's stick to pork chops for now and maybe pour some of that sauce over your baked potatoes too that was sooo goood!  
I had two adjustments to this recipe; I had a few baby bella mushrooms in my fridge so I went ahead and added them into this sauce.  Also - I didn't have whole milk, normally I sub my low fat milk in these cases but I happen to have heavy cream in the fridge so what else was I suppose to do?I used it- did I say yum yet....enjoy!!!

What you need:
4 pork chops (about 1.5 lbs)
Salt and pepper
1 tbsp olive oil
1/4 white onion, chopped
5 baby bella mushrooms sliced
½ cup chicken broth
¼ cup Dijon mustard
2 tbsp heavy cream

What you do:
Preheat your oven to 325 degrees and place the rack in the center position.
Heat a large, oven safe skillet over medium high heat for 1-2 minutes. Pat the pork dry and sprinkle with salt and pepper. Add the oil to the hot skillet and swirl to coat.
Add the pork chops to the pan and brown; cooking for about 4 minutes per side. Move skillet to the oven and bake until the pork chops are cooked through; 5-7 minutes. Remove the pork chops from the oven and place on a  platter and cover loosely with foil.

In the same skillet (be careful its going to be hot), sauté the onion and mushrooms in remaining drippings until tender; about 3 minutes. Deglaze the pan with the chicken broth - make sure you scrape up brown bits on the pan, and boil.   Add in the mustard and cream and bring to a low boil. Continue to cook for another 3-5 minutes or until the sauce is thickened. Serve the sauce over the pork chops.
