Chicken with Olives and Peppers - A Tribute Post

Today I am once again participating in a recipe linkup with the Secret Recipe Club.  This one is different though. Today we are linking up recipes from a particular blog, The Haggis and the Herring.  We are doing this to pay tribute to one of our fellow bloggers, Daniel Saraga, who passed away suddenly on September 14th.  Please stop by the blog he shared with his wife and read the beautiful eulogy that Meredith has written.

Here is what I can tell you about Daniel, after every SRC reveal I knew I could count on a comment from him on my post.  So much so that after the last reveal when my blog was having a few maintenance issues during my transfer to a .com, Daniel went out of his way to email me and let me know that he had wanted to come by my blog to see what I made and to leave a comment.  I was shocked and saddened to read about his passing and my thoughts and prayers are with his family.

The recipe I chose from The Haggis and the Herring was for this delicious Chicken with Olives and Peppers.  This is seriously my kind of dish, I love to throw all my ingredients in a pan and let it cook away in the oven. I am a huge fan of roast chicken and roast vegetables so I knew right away that I would love this dish and love it we all did!  I loved the saltiness from the olives and the tang from the lemon as well as the lovely broth that this dish created.  I chose to serve my chicken over black rice.   Oh yeah - one last thing - Little Man cleaned his plate - that's better than a two thumbs up. ..enjoy!!

What you need:
This is the recipe list from Daniels Blog - I halved the recipe and used chicken thighs instead of breast.
10 chicken breasts
5 tomatoes, sliced
1 large onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 yellow pepper, sliced
1 can pitted olives, drained and rinsed
5 cloves garlic, chopped
1/2 cup cilantro or parsley, chopped
2 cup chicken stock
1 lemon, sliced
to taste salt and pepper

What you do:
preheat your oven to 450.
Toss all the ingredients into a pan.

 Cook uncovered for 1 hour.
