Slow Cooker Teriyaki Chicken

I am slowly beginning to work our slow cooker back into my dinner routine.  I have a ton of great slow cooker recipes but I am always on the lookout for something new as well as something my kids Little Man will eat.  There is nothing green in this dish so I knew that would work for him.  He is very much like me, he loves rice, so a dish over rice works out well too.  You know what else seems to always work out with my little ones?  Serving anything Asian and setting out chopsticks.  I'm not sure why but this trick almost always results in a few clean plates around the table.  Yes it takes longer for the kids to eat and yes them eating rice with chopsticks does mean a huge mess will follow but so what (once in a while at least.)  I found this recipe for Teriyaki Chicken at Lake Lure Cottage, I will definitely make this slow cooker meal again but I may try to lessen the amount of sugar next time.  It was a bit sweet for my taste even with the addition of sriracha drizzled over mine and hubbies.  But, like a said, a winner with the kids so that  defiitely means a winner for us too...  Enjoy!!!

What you need:
12 boneless skinless chicken thighs (about 3 pounds)
3/4 cup sugar
3/4 cup soy sauce ( I prefer low-sodium)
6 tablespoons apple cider vinegar
3/4 teaspoon ground ginger
3/4 teaspoon garlic, minced
1/4 teaspoon black pepper
4 1/2 teaspoons cornstarch
4 1/2 teaspoons cold water
rice, for serving

What you do:
Add the chicken to the slow cooker.   In a large bowl, combine the sugar, soy sauce, apple cider vinegar, ginger, garlic and black pepper.   Pour the sauce over  the chicken. Cover the slow cooker and cook on low for 4 to 5 hours or until chicken is tender. Remove  the chicken to a platter and keep warm. Skim fat from cooking liquid.  Combine cornstarch and water in a small bowl until smooth. Gradually add this mixture to the liquid and stir until sauce is thickened. 
Serve with the chicken and rice.


  1. Ooh, this sounds good! I know this would be a hit in my house too. I haven't touched our crock pot in over a year. Maybe it's time to pull it out again! Think this would work with chicken breasts too?
