Secret Recipe Club - Butter Buddies

Its time for Secret Recipe Club again - I love being part of this fun club! My favorite part of the SRC is assignment day - I love when I get that e-mail in my inbox with the link to the blog that I get to choose my recipe from. I also love that all of my assignments have all come from blogs I have never been to before, it's really a great opportunity to find some fabulous bloggers out there and some delicious recipes. If you are not familiar with exactly how this club works, you can stop by the website and learn all about it - maybe even join in! Basically you are (secretly) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!

This month my assignment was Smells Like Brownies.  Brownies are my favorite dessert and Melissa definitely had a number of amazing brownie recipes for me to choose from like her Hazelnut Mocha Brownies...yumm!  She doesn't just have brownie recipes though  she has an array of delicious sounding dishes to choose from and while I had every intention of making her Greek Caponata (I still do - I have all the ingredients on my shopping list) I ended up making these Butter Buddies, or rather Sweet Girl ended up making this.  Her and Little Man were headed over to the neighbors for the day and the older siblings were babysitting.  I couldn't send them over without a special treat for everyone so Sweet Girl made these Butter Buddies for everyone...and they ate the entire bowl!  We tried to coat these in powdered sugar but for some reason we couldn't get the sugar to stick.  If you want to see what these are really suppose to look like you can head over to Melissa's blog.  But the flavor was all there even without the sugar sticking and the combination of the butterscotch and the peanut butter  along with a touch of vanilla was great (yes - the kids did let me sample one or two.)...enjoy!!

What you need:
9 cups Chex cereal of your choice
1 cup butterscotch chips
½ cup  of creamy peanut butter
¼ cup of butter
1 tsp. of vanilla extract
1½ cups of confectioner’s sugar

What you do:
Measure the 9 cups of cereal into a large bowl and set aside.
In a separate, smaller bowl, combine the butterscotch chips, peanut butter, and butter. Microwave for 1 minute, then stir. If the mixture is not smooth yet, microwave for another 30 seconds, then stir. Or you can heat over a double boiler like I did. When your mixture is completely smooth, stir in the vanilla.
Add this mixture into the bowl of cereal. Make sure to stir well until all the cereal is evenly coated.
Fill a 2-gallon Ziploc bag with confectioner’s sugar. Scoop the candy-coated cereal into the bag and zip it shut. Shake to coat the cereal with sugar.
