Lentil Salad & Giveaway Winner



At any given time I can promise you that I have anywhere between 2 to 5 bags of lentils in my pantry (all half empty.)  I know you're thinking "wow that girl loves her lentils!"  And while I do love some lentils that's not why I have so many bags in my pantry.  I took some fun ideas from Pinterest and organized my small pantry with some great dollar store baskets - it looks so cute!  I have one of these great baskets on my shelf (near the top of the pantry) and it is full of bags of dried beans and rice etc.  The only problem is I'm 5'2"!   I can not see inside those cute baskets!  So everytime I walk through that grocery store aisle where the lentils are - I grab another bag...could be worse I guess I could be stocking up on chocolate chips.  If you have a bag  (or 2) of lentils lying around I suggest you whip up this simple and delicious Lentil Salad...enjoy!!

What you need:
2 cups of lentils
6 sprigs of fresh parsley (chopped)
1 sprig of thyme (chopped)
1 bay leaf
for the dressing:
1/4 cup of Dijon mustard
1/4 cup of red wine vinegar
2 tablespoons of extra virgin olive oil
3 shallots (peeled and thinly sliced)
salt and pepper

What you do:
Put the lentils in a large pot and cover with 1-2 inches of water.  Add the parsley, thyme and bay leaf.  Bring to a boil.  Reduce the heat to med-low and simmer for 15 minutes until lentils are tender but not mushy.
While they are simmering mix up the dressing ingredients and whisk briskly.
When the lentils are cooked drain them and then toss with the dressing.  Serve warm or at room temp.

  2. I always find myself at the store certain that I am out of one bean or another and so I buy more...only to find that I already had a few bags! Same goes for chocolate chips, unfortunately. :P Love this salad!
