Texas Caviar

Who doesn't love some caviar?  Texas Caviar that is!  It is such a simple dish to prepare but the flavors are so good.  There are a million different (yet similar) recipes out there for this great dip, I chose an easy recipe for our  version and served it up with some tortilla chips for dipping. As you can see I go for a rough chop on my veges, I love chunks of flavor in my food  -I'm not a small dice kinda girl.    I chose this particular recipe because of the addition of the avocado.  I'm glad I did - we all really enjoyed this version so I am happy to share it with all of you. So if your looking for a healthier dip option I definitely recommend giving Texas Caviar a try...Enjoy!

How do you make your caviar?

What you Need:
2 cans of black eyed peas, drained and rinsed
1 can diced tomatoes with green chilis, drained
1 medium green pepper, chopped
1 small red onion, chopped
1/2 cup Italian dressing
2 tablespoons of lime juice
salt and pepper
1 avocado, peeled and cubed
tortilla chips

What you do:
In a large bowl, combine the black eyed peas, diced tomatoes, green pepper and onion. In a small bowl, whisk the dressing, lime juice, salt and pepper. Pour dressing over black-eyed pea mixture and stir to coat. Cover and refrigerate for at least 1 hour.
Stir in avocado just before serving. 
Serve with chips.
