Pineapple-Mango Ice Cream


Here is a picture of a delicious bowl of Pineapple- Mango Ice Cream - yes it is somewhat melted and yes that was because we just couldn't wait for it to completely harden to eat it.  This was a great flavor combination and I definitely plan on doubling this recipe the next time I make it.  Actually I didn't make this - this fabulous group of kids made this delicious summer treat!




We were originally going to make some Pineapple Ice Cream that we selected from a great cookbook we borrowed from the  library, Ice Cream and Iced Desserts. But we didn't have all the right ingredients so we created our own recipe - this is the perfect treat to beat the heat this summer...Enjoy!!!

recipe adapted from Ice Cream and Iced Desserts
What you need:
1 sweet pineapple
2 large mangoes
1 1/4 cups whipping cream
1/4 cup sugar

What you do:
Slice and peel the pineapple and the mangoes and add to blender or food processor.  Puree the fruit and then set aside.  Whip the cream by hand until just thick but still able to fall off the spoon.  
Fold in the puree and the sugar and then pour the mixture in to a freezer proof container.  Freeze the puree for 6 - 10 hours, beating twice with a fork.
