My family loved this dish (although if you add kielbasa to anything Hubby would love it anyway.) I have made roasted chickpeas before and we eat them as a snack quite regularly but I loved how the chickpeas went so well with the rest of the dish and I am going to use that little trick of roasting the chickpeas before adding them into a dish a lot more. I definitely recommend giving either version of this dish a try..enjoy!!

What you need:
1 can chickpeas, drained and rinsed
1/2 onion, cut into chunks
1 - 1.5 pounds shrimp
6 garlic cloves, peeled
1/2 a kielbasa, sliced
2 tablespoons olive oil
juice from 1/2 lemon
1 teaspoon lemon zest
1 sliced lemon
salt and pepper
crushed red pepper
What you do:
Preheat oven to 450 degrees.
In a baking dish add; chickpeas, onion and garlic cloves. Toss with one tablespoon of olive oil, salt and cook for 20 minutes.
Meanwhile, marinate the shrimp in the remaining olive oil, lemon juice, zest, crushed red pepper and some salt in a bowl.
Top the chickpea mixture with the sliced kielbasa and the marinated shrimp. Place sliced lemon over top and cook for an additional 8-10 minutes.
