Crispy Shrimp Tacos and Mango Guacamole

I love avocados and around here we add them to just about everything.  One of our new favorite ways to use them is by changing up our guacamole a bit and adding mangoes - so good!  This Mango Guacamole goes really well with Crispy Shrimp Tacos.

Here's what you need for these great tacos:
1 pound peeled and deveined small shrimp
large egg white, beaten
1/2 cup all-purpose flour
1/2 cup cornmeal
6-inch corn tortillas, warmed

What you do:

In a bowl, toss the shrimp with the egg white. In a second bowl, combine the flour, cornmeal, ½ teaspoon salt, and ¼ teaspoon pepper. Add the shrimp and toss to coat.
Heat the remaining ½ cup of oil in a large skillet over medium-high heat. Working in batches, fry the shrimp until golden, 2 to 3 minutes per side. Serve with tortillas and add your choice of toppings.

What you need:
3 medium ripe avocados from Mexico
1/2 small red onion, chopped
1/2 to 1 whole serrano chile, stemmed, seeded and finely chopped
2 tablespoons loosely packed cilantro, plus some for garnish
1 tablespoon fresh lime juice
1 large ripe mango, peeled and diced

What you do:
Scoop the avocado flesh into a bowl and coarsely mash.  Scoop the onion into a strainer and rinse under cold water. Shake off the excess water and add the onion to the avocado along with serrano, cilantro, lime juice and 2/3 of the mango.  Combine.  Taste and season with salt (about 3/4 teaspoon.)
