OK so seriously - whats better than meatloaf, mashed potatoes and peas? Not much right ? This is different though - this is so not the meatloaf, mashed potatoes and peas that my mom made for us growing up. First off - this is actually a turkey loaf. I replaced the ground beef in this recipe with ground turkey (mom never did that) and I added a peeled and shredded apple. The mashed potatoes didn't come out of a box like they did when I was younger (I know - yuck) and also, these have a a head of roasted garlic mashed into them and some goat cheese too, similar to these. The peas have caramelized onions in them. So I'm sorry Mom - but this time mine was better -I'll make it for you when you come to visit and let you be the judge.
Speaking of being the judge - My Little Man is the pickiest eater in this house but that kid loves some meatloaf. When I saw this recipe I knew he was going to love it! The verdict - he did love it -he loved it all and cleared his plate he loved the seconds too and thirds... I hope you like it s much as him ...enjoy!!

What you need:
1 small onion, chopped
2 teaspoons butter
3/4 cup peeled and shredded apple
1/2 cup breadcrumbs
4 teaspoons of ketchup
1 teaspoon Dijon mustard
salt and pepper
dash of ground allspice
1 pound ground turkey (or lean ground beef)
What you do:
Preheat oven to 350 degrees and spray an 8 inch square baking dish with cooking spray.
In a small skillet saute the onion in butter until softened.
In a large bowl, combine the apple, bread crumbs, egg,ketchup, mustard, salt, pepper and allspice. Once the onion is cooked stir it into the large bowl with the other ingredients. Now crumble in the turkey and mix well.
Shape your ingredients into a 6x5 loaf and place into the baking dish.
Bake, uncovered, for 40 - 45 minutes until no longer pink.
