Margarita Jello Shots

Remember last weekends "What I Bookmarked" post?  I bookmarked these amazing Margarita Jello Shots and then I said I was going to be making them for Cinco de Mayo.  Guess what?  I made them for Cinco de Mayo!  Yes I did and boy were they yummy!  Pretty popular too.  I added the extra step of rimming each and every cup with lime and dipping into salt.  It actually didn't take that long and makes for a great presentation.  Also - what's a margarita without some crunchy salt right?  I made them for Cinco de Mayo but these shots are great for any fun summer get together and I know I will be making them again.  I might add a bit more tequila next time and a bit less water.  After all, it was only one half a cup tequila and about 35 little shots - I think a bit more is needed.  I am having a lot of fun making all these different jelly shots - remember my Malibu Jelly Shots and my Eggnog ones?   Enjoy!!

recipe adapted from Hostess Jo
What you need:
2 cups of boiling water
2 pkg.  (3 oz. each) JELL-O Margarita Flavor Gelatin (or lime flavored)
1/2 cup tequila
Zest and juice from 1 lime
2 cups thawed COOL WHIP Whipped Topping

What you do:
Add the boiling water to jell-o mixes in large bowl; stir with whisk for about  2 min.  or until the powder completely dissolves. Stir in tequila and 2 Tbsp. lime juice. Add Cool Whip and 1 tsp. of lime zest; stir until Cool Whip is completely melted and mixture is well blended.

Pour into into 35 - 40 mini cups (*optional* that have been rimmed with lime juice and dipped in kosher salt)or an 8-inch square pan.
Refrigerate for about  3 hours or until firm. Cut into 36 pieces to serve if using the pan.

  4. Yum and such an awesome idea. I am a bit of a lightweight, so have always avoided jelly shots...but these look so green, fresh and yummy...I might have to make them. Would love it if you would link these up to my summer festival link up.

  5. I think I could use about 20 of these right now! Lol. They look yummy, and I've never been a big drinker so I think jello shots could be right up my ally.
