Ideas For Cinco de Mayo

Cinco de Mayo is on Saturday do you have your menu planned? Are you looking for some ideas?  I have a few recipes for you to check out.

I serve this Black Bean & Corn Salad as a Salsa sometimes with tortilla chips - it's a great appetizer.



Or maybe some Mango Guacamole?



Taco Pie is always a hit with the little ones.



If it cools down a bit on Saturday - you could always serve Taco Soup.



I have tacos in all forms - Taco Pizza anyone?



For a non beef alternative - Crispy Shrimp Tacos.



Abondigas are great  -I served mine with rice but you can serve these meatballs anyway you like?



Kids love quesadillas - this is a great kid friendly dish.  Beef Quesadillas, grownups like them too.



I can't  count how many times I made these delicious Carnitas - so good!



Chicken Mole done in the Slow Cooker.



Last months most popular post was for these delicious Skinnier Chicken Enchiladas.



For dessert, how about the cookie that has many names,  for now we will call them Mexican Wedding Cakes (or is it tea cakes)?



And you can wash it all down with a refreshing Michelada.
