Goat Cheese and Tarragon Stuffed Chicken Thighs

I think you could put goat cheese on anything and I would gobble it up.  In this recipe I combined goat cheese with one of my favorite herbs, tarragon, along with some garlic and lemon zest to create a great filling for chicken thighs.  You could easily make this with chicken breast if you prefer, we are just big fans of the darker meat around here.  I have made this before with different combinations of herbs added to the goat cheese and sometimes I've added tomatoes too.  You could get creative with this and mix whatever you like into the goat cheese.  Here's the recipe for my creation - Enjoy!!

What you need:
4-6 chicken thighs
3-4 ounces of goat cheese (a half a log)
1 teaspoon of tarragon
1 garlic clove, minced
1 tablespoon olive oil
lemon zest - a few passes over the zester is fine
salt and pepper to taste

What you do:
Preheat oven to 375 degrees.  Meanwhile prepare your filling;  mix the goat cheese, garlic, tarragon, zest and a olive oil in a small bowl.
Seperate the skin from the chicken by running your fingers under the skin.  Divide filling into even portions and push onder the chicken skin.  Place chicken thighs on baking sheet and drizzle with olive oil and then season with salt and pepper.  Bake for about 40 minutes.  I like to broil it at the end to crisp the skin - just a few minutes is all you need.
