Artichoke Bread



It's Friday!  Time for another Your Recipe-My Kitchen post.

My Pinterest board is overflowing with recipes so I have been working hard to cook through them.  I even set up another Pinterest board titled "Pinned it and Did it."   This is where I move the "Done" stuff.  I have one more recipe to move to my "...did it" board - this amazing Artichoke Bread.  I made this for the Superbowl and it was a hit .  The original recipe from Vanilla Sugar Blog had the bread served with a spicy hummus.  We love hummus but we feel like that is what we always bring to parties plus the bread didn't seem to need it so I left it out this time.  I definitely recommend you make this bread it is just that good!  My kids were fighting over the last piece - (just don't tell Little Man about the artichokes - silly boy!!).....Enjoy!

What you need:
1 /4 cup butter (I used a butter and olive oil combination)
3 crushed garlic cloves
1 (14 ounce) can of artichoke hearts, drained and chopped
4 ounces of shredded mozzarella cheese
1 1/2 cup Parmesan cheese, divided
1/2 cup of sour cream
1 loaf French bread
salt and pepper to taste

What you do:
Preheat the oven to 350 degrees.  Melt the butter in a pan  over med-high heat.  Add the garlic to pan and cook about 30 seconds, until fragrant.  Add the artichokes, mozzarella, 1 cup of Parmesan and sour cream.  Stir to blend together and then remove the pan from the heat and let cool. 
Slice the bread lengthwise and scoop out some of the center to make room for the filling.  Spoon the mixture into the bread and sprinkle with more Parmesan cheese.
Place the bread in a baking dish and cover tightly with foil.  Bake for 25 minutes and then remove the foil and cook for another 5-8 minutes or until the cheese is completely melted. Slice and serve.

  9. That looks fabulous, I love anything with artichokes...although I can't really see serving it with hummus...that doesn't seem to go together to me.
