Pork Chops with Pancetta and Cabbage

Purple is my favorite color!  For my birthday Hubby surprised me with a purple dutch oven - I can't wait to cook with it.  Sweet Girls room is purple too.  Purple rocks - right!  Purple food is good too - I found a great recipe for Pork Chops with Bacon and Cabbage on Delish  and made a few modifications - both in ingredients and in color.  We ended up with a great one pot dish.  The sauce in this recipe is creamy and comforting.  Enjoy!!

What you need:
2 tablespoons olive oil
4 (1-inch-thick) bone-in pork chops
 Coarse salt
Ground pepper
4 strips pancetta or bacon, coarsely chopped
1 medium onion, cut into thin slices
1 head purple cabbage, cored and cut into 8 wedges
3 tablespoons all-purpose flour
3 cups milk

What you do:
Preheat oven to 400 degrees. Place a large pan that can go into the oven over high heat, add oil and heat. Season pork with salt and pepper; brown on one side, 3 to 5 minutes. Flip and cook 1 minute more. Transfer to a plate.
Reduce heat to medium. Add pancetta to pan and cook until golden and crisp, about 5 minutes. Add onion; cook until softened, 5 minutes. Add cabbage, cut side down,and cook for about  6 minutes. Flip and cook until slightly tender, about 3 minutes. Add flour and stir until coated. Add milk and cook, stirring constantly, until thickened, about 4 minutes. Season with salt and pepper, then nestle pork chops in sauce. Transfer pan to oven. Bake until pork is cooked through, about 10 minutes.
