Turkey, Cranberry and Blue Cheese Sandwich




I know I have said this many times but I love, love, love Thanksgiving but as much as I love Thanksgiving I have to admit, I love Thanksgiving leftovers a bit more.  I know I am not alone in this.  And of course we all need our "Leftovers Sandwich" right?  What do you put on your sandwich?   Here is how I built mine for lunch today.  I raided the fridge and pulled out a bunch of vegetables; romaine lettuce, matchstick carrots and  some chopped chives. I sliced up some of our fabulous pancetta-sage turkey and then grabbed the leftover cranberry sauce that was hidden in the back of the fridge and a bottle of Simply Dressed® Blue Cheese Salad Dressing from Marzetti.  Oh, I forgot to mention I layered this all on top of some homemade Rosemary Foccacia Bread that I had made in the bread machine.  I contemplated adding the stuffing too but figured that that might be carb overload - especially since I told myself I would be having salad for lunch today to make up for the nonstop food fest that had been going on all weekend here..  OOPS!  Although I do believe this definitely would have made a great salad too and I might have that tomorrow but today - we still had leftover focaccia and I couldn't just leave it there.



This was so good! Like the kind of good that  when you grab the sandwich to take a bite before bringing it to the table just to make sure it isn't missing anything  and then end up just standing over the counter until the sandwich somehow disappears. Yup!  That good.  
 I was a little hesitant to combine the Simply Dressed® Blue Cheese Salad Dressing  and the cranberry sauce at first, I wasn't sure how these two flavors would meld.  I know I like dried cranberries and crumbled blue cheese together and often add them both to salads so I figured it would work out well with the dressing and the sauce - and you know what? It did!  Hubby is going to be so upset - poor guy, I packed his lunch last night before I had to a chance to get creative.  He loves Blue Cheese more than I do so I know he would have loved the wonderful flavors in this dressing. The good news is we still have a lot more leftovers in the fridge and I am definitely surprising him with this great sandwich in his lunch tomorrow.  One of things I love about this dressing (besides the way it tastes - which is just great) is that all the Simply Dressed salad dressings are all natural they are made with extra virgin olive oil, sea salt and canola oil. And since they’re all natural salad dressings, they don’t contain preservatives, trans fat, high fructose corn syrup, MSG and artificial flavors.  There are so many great flavors to choose from.  I almost walked away with the Simply Dressed® Pomegranate Salad Dressing but I couldn't resist the call of the Blue Cheese.  Check out some of the other great flavors - which would you try?
