Pumpkin Chili

We love to play guess the ingredients while sitting at the dinner table.  A lot of times I have to be careful because Little Man may like something a lot until he finds out what's in it- like when he ate 2 slices of my Eggplant Ricotta Pizza until he found out it was eggplant and then swore he didn't like it.  No one was able to guess that there was pumpkin in this not even Hubby. And when Little Man found out, he was not scared away - he even went back for more.  I hope you like it too!

What you need:
1 can kidney beans, drained
1 can pumpkin puree
1 can diced tomatoes
1 cup salsa
1 lb ground beef
1 onion, diced
1/2 green pepper, diced
2 garlic cloves, minced
1/2 cup chicken broth (or beef)
1/2 tablespoon cumin
1 1/2 tablespoon chili powder (I add a small amount when cooking for the family and then add more to the adults dishes when plating)
a pinch of cayenne
salt and pepper

toppings (optional)
avocado, sliced
hot sauce
sour cream
shredded cheese

What you do:
Brown the ground beef and drain, add the onions and peppers and saute until softened add the garlic and saute a minute more.  Add the spices and cook for about one minute or until it is fragrant.   Add the broth and let simmer until liquid evaporates a bit and then add the pumpkin,  tomatoes and salsa.  Bring to a boil and simmer for 20 minutes, add the kidney beans and cook for 10 more minutes.  Serve with optional toppings.
