I bookmarked a recipe for Mujadara a while back and I was reminded of it when I looked through my pantry for dinner not too long ago. I checked the original recipe and for some reason - either ingredients or time restraint kept me from making it. But I had a craving and really wanted this dish so I searched for ideas and adaptations. I started making this dish one way (that required about 3-4 pots) and finished it off with this recipe (that required 1 pot and a saute pan) for Mujadara: Lentils, Rice and Onions from The Confused Homemaker. I absolutely loved this dish and the combination of flavors, I think I ate it cold for lunch the next day because I just didn't want to wait for it to heat up. I also served this with plain Greek yogurt. Enjoy!!
What you need:
1 Cup Lentils
1 Cup Rice
3 1/2 Cups Water
4 Onions, sliced
1 teaspoon Cumin
1 teaspoon Salt
1/2 teaspoon Pepper
2 tablespoons Oil
Greek yogurt (Optional)
1 Cup Rice

What you do:
Heat a pot on med-high heat. Add 1 tablespoon of Oil and 1/2 an onion. Cook until onion is caramelized.
Add lentils, water, salt and pepper. Bring to a boil. Cover, reduce heat and simmer for 20 minutes.
After 20 minutes, add the rice and Cumin. Cover and simmer for another 20 minutes.
Heat a saute pan over med-high heat. Add the remaining 1 tablespoon of oil and remaining onions. Cook until fully caramelized and blackened.
Serve the rice and lentils topped with the caramelized onions.
Top with a dollop of Greek yogurt (optional)
