Cinnamon Oat Pancakes



This is another pancake recipe brought to you by Sweet Girl.  My kids LOVE pancakes and every Saturday they make pancakes with their daddy,  sometimes they create together like when they made these Apple Pancakes, or these amazing Oatmeal Cookie Pancakes, and we can't forget the tasty Flapjack Flapper's Flapjacks.  And other times Sweet Girl creates on her own, like these great Cinnamon Oat Pancakes from Martha Stewart that she made this past weekend.  They were good - the texture was different than regular pancakes, you could really taste the oatmeal.  Oatmeal is one of my favorite things and what  I eat for breakfast every weekday morning so I loved the flavor.  This recipe makes a lot of pancakes!  Enjoy!!

What you need:
2 cups all-purpose flour
1/4 cup brown sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups old-fashioned rolled oats
2 cups of milk
2 large eggs
1/4 cup vegetable oil

What you do:
In a food processor, grind 1 cup of oats coarsely. In a bowl, combine the remaining cup of oats, flour, sugar, baking powder, salt, cinnamon, and add the one cup of ground oats to this. In a large bowl, whisk together milk, eggs, and oil. Add dry ingredients and whisk just until moistened.

Sweet Girl felt the batter needed a lot more cinnamon - so ours were extra cinnamony and extra yummy!


Heat a large skillet or griddle over medium heat. Lightly oil skillet. Using 2 to 3 tablespoons for each pancake, drop batter in skillet and cook until bubbly, 1 to 2 minutes. Flip pancakes and cook until browned on other side, 1 to 2 minutes more. Repeat with more oil and batter.
