Savory Oatmeal



I am so excited about this post - because well as embarrasing as it is, oatmeal does excite me.  Hubby and I went on vacation this past weekend and I could write an entire post about the amazing steel cut oats I had at the hotel and all the fabulous toppings but I digress. Back to this recipe. ... The other day it was lunch time and for some reason nothing in the refrigerator appealed to me, I kept going back to the pantry and looking at my container of oats and thinking I want that but I also want something savory.  So I stepped over to the computer and googled "savory oats."  A few recipes came up that looked interesting but I didn't have the right ingredients for any of it so I read, I combined,I omitted and I came up with my own savory oats.  I can't tell you how much I loved this dish.  I have never eaten oats that were not a sweet breakfast or a yummy dessert - this was delicious!  Enjoy!

this recipe is for 1 serving
What you need:
1 cup water
1/2 cup oats
Cooking spray
1 egg
1/3 cup onion, diced
1-1/2 teaspoons soy sauce, plus more for drizzling
1/4 teaspoon
Sriracha
1 teaspoon toasted sesame oil

What you do:
Bring 1 cup water to a boil. Stir in  oats and cook, stirring frequently, over medium heat until thickened and creamy, about 1-1/2 minutes. Cover oats and  remove the pot from heat.
Heat a small pan over medium heat; coat evenly with cooking spray. Crack egg into pan and cook  for about 3 minutes, or until whites become opaque and yolk is slightly set, but still runny.
Remove egg and set aside; add diced onions and saute until soft.
Add soy sauce and Sriracha to oatmeal; stir to combine.Scoop oats into a bowl and top with diced onions and fried egg. Drizzle with sesame oil and soy sauce.

  2. Oh yeah!!! had to pin this one. I never would have put onions & soy sauce in oat meal, but I'm going to try it :)

  6. Most other countries eat savory grain dishes like this for breakfast. I've never gone the savory oatmeal route myself but this sounds so good, especially with the runny yolk on top!

  7. How interesting! I'd have never thought to make oatmeal savory, but I bet it's absolutely delicious with a poached egg on top. Yum!
