Arroz Con Pollo

I think this is one of my favorite dishes.  I have tasted Arroz con Pollo made a dozen different ways in a dozen different places and I loved them all.  I had a craving the other day and threw together my own combination and I am very happy with the results.  When dinner was on the stove cooking, Hubby walked through the door and came in to the kitchen.  He took a few sniffs and asked, "Are you making Arroz Con Pollo?"  I was floored!  I didn't realize this dish had a specific smell - I don't make it too often either so I was doubly surprised.  But I guess his nose knows - because he was right.  Here is an easy recipe for a great one pot dish - Enjoy!!

What you need:
1 lb chicken thighs
salt and pepper
1 onion, diced
3 garlic cloves, minced
1 can diced tomatoes, drained
3 1/2 cups broth or water
1 cup peas
1 bag saffron rice

What you do:
Season chicken with salt and pepper.  Brown the chicken over medium- high heat in a skillet and remove, drain the fat reserving 2 tablespoons.  Lower the heat and saute the onion and the garlic until softens.  Add the drained tomatoes and the liquid (broth or water.)  Add the rice and bring to a boil.  Reduce the heat and top mixture with chicken and any juices on the plate.  Cover the skillet and cook 20 -25 minutes,  Add the peas until heated through.

  2. Arroz con Pollo definitely has a smell of its own. We love to make ours with a creamy curry mustard sauce on the side. So good :)
