This is a recipe I bookmarked a few weeks ago from Closet Cooking it is for Tilapia Baked in Thai Green Curry Sauce. This was so good. I love curry flavors and have posted quite a few curry dishes like this one and this one oh and I almost forgot this one too. This is the first time I have made a curried fish though- it won't be the last time. I do have one small confession, I didn't use tilapia and for the life of me, I just cannot remember what type of fish this was. Normally we buy salmon or tilapia and this was one of those rare days that we were in the store and something we never heard of was on sale so we went ahead and tried it. We really liked it so hopefully I can figure it out. Regardless, this sauce is amazing and would work well with any white fish and I will definitely be making the tilapia real soon. We omitted the chili because the kids were eating it too but I know I would have loved the heat. In addition to the fish we had roasted cauliflower with garam masala. And an amazing garbanzo and rice dish that Hubby threw together. It was a delicious meal. Enjoy!!
What you need:
1 tablespoon oil
1 tablespoon green curry paste
1 (14 ounce) can coconut milk (I use light)
2 tablespoons fish sauce
2 teaspoons sugar
1 lime, juice and zest
2 tilapia fillets
1 handful cilantro, chopped
What you do:
Heat the oil in a pan.
Add the curry paste and saute until fragrant, about a minute.
Add the coconut milk, fish sauce, sugar lime zest and lime juice and bring to a boil.
Once it boils pour the mixture over the fillets in a baking dish.
Bake in a preheated 350 degree oven until cooked, about 15-20 minutes. The fish will be cooked when it flakes easily and it is no longer translucent.
Garnish with the cilantro and serve.
