I have been following the Secret Recipe Club for a while and decided it was time to finally join in. If you are not familiar with this club , you can stop by the website and learn all about it - maybe even join in! Basically you are (secretely) assigned a blog to checkout, browse through their recipes, choose one to make and blog about it. It's a lot of fun!
The blog I was assigned to this month was Angela's Kitchen. Angela had so many great recipes to choose from but when I saw a link to Recipes for the Slow Cooker, I figured I would go there and begin my search. Now that I have two nights a week of afterschool activities, I like to get my dinner in the slow cooker so it's ready when we finally get home. Angela had so many great recipe to choose from but after browsing through them all I decided to go with Chicken Jambalaya. Angela's recipes are all gluten free - for her gluten free recipe click here. Here's my version - oh wait , I forgot to mention - this dish was great!! I used chicken thighs in my version and shredded it before serving. We absolutly loved the amazing flavors in this dish and I loved how easy it was to put together. I actually had all the ingredients in the house before I started. I will definitely keep this recipe in my rotation. Enjoy!!
What you need:
1 1/2 lbs chicken thighs (or chicken breast)
14 oz. kielbasa or smoked sausage, sliced
1 – 28 oz. fire roasted diced tomatoes
2 medium onions, diced
2 green bell peppers, seeded and diced
2 stalks celery, diced
1 cup chicken broth
3 garlic cloves, minced
4 teaspoons dried oregano
1 teaspoon dried thyme
3/4 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
3 bay leaves
What you do:
Throw it all in the slow cooker and let cook on low for 7 hours. Because I had bone-in chicken thighs on hand I used that. Before serving I just pulled out the bones (the chicken will literally fall right off it) and shredded the chicken. Remove the bay leaves before serving. We had this over rice.

ReplyDeleteOh my goodness... I searched all over blogland this past Saturday for a recipe for crock pot jambalaya. Didn't find what I was looking for, so I had to arrange my schedule to accommodate making it the traditional way.
