This was my first attempt at a Picadillo. I love this dish but Hubby usually cooks this so I never attempted it before. When I decided to make this, I looked up a few different Picadillo recipes online and then thought about Hubby's dish and tried to come up with a combination of all of them (based on ingredients on hand.) And this is the delicious dish I came up. I really enjoyed this- sorry Hubby but you now have some fierce competition for best Picadillo. Enjoy!!
What you need:
1 lb ground beef
1 medium onion, chopped
1/2 green pepper, chopped
3 garlic cloves, minced
2 teaspoons of chili powder
1 1/2 teaspoons dried oregano
1 1/2 teaspoons cumin
3/4 teaspoons cinnamon
a pinch of cayenne pepper
1/2 cup chopped green olives
1/2 can of drained chickpeas
2 tablespoons tomato paste
1 cup of water
salt and pepper to taste
What you do:
Brown the ground beef in a skillet until no longer pink and then drain fat.
Add onions and pepper to skillet and saute until softened. Add garlic and saute for a couple more minutes. Add spices and cook until fragrant, about 1 minute more.
Add olives, chickpeas, tomato paste, water and meat to skillet. Stir to blend it all.
Cover, reduce heat and simmer stirring occasionally for about 10 minutes. Season as desired.
We enjoyed this dish over rice.
